Samgyeopsal Grilling

JA: サムギョプサルのグリル

Samgyeopsal grilling refers to the method of cooking thick slices of pork belly over a grill, typically at the table, where diners can cook their own meat.

What it means in a kitchen

In a working kitchen, samgyeopsal grilling emphasizes the importance of maintaining high heat and ensuring the meat is cooked evenly. The quality of the pork belly is crucial, as it should have a good balance of fat and meat for optimal flavor. This method also requires proper ventilation to manage smoke, particularly in a home kitchen setting.

Common misunderstanding

Many people think that any cut of pork can be used for samgyeopsal, but only pork belly is traditional and ideal due to its fat content. Additionally, some believe that the grilling process is quick, when in fact it requires careful attention to avoid overcooking.

Example

When preparing samgyeopsal at home, heat a grill pan to around 200°C (392°F) and place the pork belly slices directly on it. Cook each side for about 3-4 minutes until the fat renders and the meat is nicely browned.
