Fat rendering is the process of melting fat from meat or other sources to extract the liquid fat.
What it means in a kitchen
In a working kitchen, fat rendering typically involves cooking fatty cuts of meat over low heat, allowing the fat to melt and separate. For example, rendering pork belly at around 250°F (121°C) for 1 to 2 hours will yield a significant amount of liquid fat.
Common misunderstanding
Beginners often believe that high heat is necessary for rendering fat, leading to burning rather than melting. Patience is key to achieving a clean render.
