A foundational liquid made by simmering bones, aromatic vegetables, and water.
What it means in a kitchen
Stock in French ("fond blanc" for white, "fond brun" for brown) is the base for sauces, soups, braises, and risottos. Bones provide collagen for body; aromatics provide depth. Stock is not seasoned — that comes later, in the dish it builds.
