French for both a base stock and the browned residue left at the bottom of a sauté pan.
What it means in a kitchen
Fond means foundation. In a stockpot it's the base liquid; in a sauté pan it's the dark stuck-on residue from browning meat — the flavor that deglazing lifts into a sauce. The two meanings are connected: both are concentrated kitchen savor.
